We love just sitting in our backyard drinking wine, listening and watching the wildlife. 🐾🐿️🦎🦉

Soba and his funny antics. Chipmunks and squirrels scurrying around.
Lizards/anoles laying about and puffing their beards. Woodpeckers drumming about. Getting graced by a pair of barred owls and listening to their calls.

The wine was crisp, refreshing, mineral, and most importantly delicious. Salty 🧂 minerality and a lemon 🍋 core with a touch of almond and baked goods to flesh it out. Delicate florals 🌸on the nose. Gentle bubbles more on the vinous side, which I enjoyed.

Sommelier Cider! 🍏🍾🍎🥂🍐
Eric Bordelet was once a sommelier at the top restaurants in France. Now he's an amazing ciders/sidre producer with ciders that can share a place at the table with high quality wines.
Dry with a creamy mousse. Natural native fermentation with indigenous yeast. Grower and producer. Grown on chalky limestone, clay, and gravelly loam soil. Heirloom varietals that are diversified and farmed biodynamically.
If you told me you had a wine with all this I would say I'd love to taste and try it. All the nerdy sommelier things but done and translated to cider/apples and pears.
If this was a grower champagne it would be sold out, allocated, and expensive 🫰.
But lucky for us it isn't and many people don't know how crazy good sidre can be.

It has satisfying mousse bubbles, tannins and flavor complexity that adds to the experience that wine might not be able to bring.
The lower abv makes for a more refreshing beverage especially if you are going to be enjoying a lot of wine. Your body will thank you the next day when you are less hungover.

Old vine aligote from Puligny-Montrachet.
Multigenerational estate with a proven record of creating exceptional wines. Low yield, organically farmed, horse plowed, whole clustered pressed.
✔️✔️✔️✔️✔️✔️✔️ And it can be usually found for under 30 dollars ✔️. Insane value and wine.
Aligote can go the distance and age. It is still vibrant and has lots of verve. Age is softening and rounding the wine giving it a touch more weight than it had in its youth. The salty minerality I usually get with this wine is starting to evolve into a salty cheese like parmigiano.
I'm glad I have a few more bottles in the cellar.

Many people know Nikolaihof for the exceptional wines that they produce. A hidden treat from the estate is an elderflower syrup they painstakingly make with very limited bottling.
Refreshing acidity and sweet floral notes but with subtle complexity underneath.
It makes a great soda when mixed with sparkling water or sub sparkling wine for a fun spritz.

Two nights ago @jayleenloet and I drank the last of our @tylerwinery chardonnay.
It was a wine and winery I really enjoyed and fell in love with back in Denver.
We got 30 bottles in Portland. Throughout the next few years we would enjoy the wines over numerous dinners, evenings, and times we just needed that good chardonnay fixing. We brought the bottles with us to Chattanooga and then Atlanta. We withstood countless journeys and obstacles the same for the wine. And this last bottle was delicious the age and time has evolved the wine well.
Time to order some more for the next future endeavors.
